Tozzetti – Classic almond biscuits (-4 weeks)

Recipe 11: This is not one of my mum recipe but is one of her bestfriend’s recipe and I can tell you I tried this biscuit before and they are really good! I tozzetti are a classic of the italian tradition! I’m sure you saw them around and here is the very old recipe she follow to make them! They were a little Christmas present I gave to my friends!

Here the ingredients for a good quantity (but maybe it’s better to start with half of it): 3 eggs, 600gr flour, 300gr sugar, 50gr of butter, half skin of an egg full of oil, half a glass of white wine, a spoon of baking powder, some icing sugar, 200gr of skinless almonds in pieces or whole(I prefer because it’s more traditional).

The process is very easy; just mix the sugar, flour, eggs, the butter all together. Then add the wine, the oil and the baking powder trying to create a ball. You will need to mix a bit and try to make everything stick together until you are able to create the mass. Now add the almonds and try to create a homogeneous mass again.

When ready place some baking paper on a baking pan and create long bars! In this way when you will cut them in slices they will have the classic “smiley effect”.

Place them in the oven at 160 degree. They need to cook a bit and then you need to turn it, otherwise they will be ready just in one said. Check from time to time the base and when quite cooked (15-20 minutes), cut them in pieces and let them finish to cook (5 minutes).
When ready, serve it with some icing sugar on top!

Ps. Considerato che li ho fatti preparando il cenone di Natale, con la supervisione di mia mamma, dico anche che ho scordato il lievito e lo zucchero a velo prima di impacchettarli. Questo ha creato dei biscotti un po’ duretti! Spero che tutti gli amici a cui li ho dati abbiano ancora i denti.

Ciambellone cocco e cioccolato – chocolate & coconut cake

Recipe 64: Last weekend was the birthday of a friend coming form Italy and i couldn’t let him down without a birthday cake… so we organized a quick dinner in my house. The problem was that on sunday the majority of the supermarkets here in London close early, so i had to do my shopping in an express one… this means there was nothing! I just saw some coconut powder and this was the cake.

Ingredients: 200 gr of dark chocolate, 300gr flour, 170gr grated coconut, 250gr sugar, 150gr butter, 3 eggs, 1/2 cup of milk, some baking powder and  half of a vanilla pod. Choose a big baking pan because the mix will be quite a lot and the cake will also grow a lot in the oven.

Put in a little sauce pan the chocolate and melt it on a low fire. To avoid the chocolate from burn, you can put this pan in a bigger pan with boiling water. In this way the chocolate will melt for the hot from the water without burn or stick to the pan. In the meantime mix the 3 eggs and the sugar until they create a yellow cream.

Put the half cup of milk in the microwave and let it become hot. Then open the half vanilla pod and leave it in the hot milk to release all the flavor. When the chocolate is all melted, add the butter and let melt this too in the same way.

When the chocolate and butter are melted leave it to cool down. In the meantime add in the mixed the flour, the milk with vanilla, the coconut powder, a spoon of baking powder and finally the chocolate and butter.
Mix it all very well and don’t worry about the clots because these are created by the coconut powder, but it’s not a problem.

Choose the baking pan and cover it with butter and flour or just baking paper like i did.  Add the mix of ingredients and put it in the oven at 180-200 degree for 1 hour!  Here is the result! On top spread some icing sugar or coconut powder if you still have it and serve it with some ice cream or just whipped cream.

As for the whipped cream, we couldn’t find not even the candles in the express market, so just pure Ciambellone cocco e cioccolato and the only candle i had at home! However the birthday guy was happy and liked the cake… that’s the most important!

PS. Mamy lo scorso fine settimana ho dovuto improvvisare una torta di compleanno senza nenache i supermercati aperti. Cercavo la ricotta per fare la tua torta, ma purtroppo nulla e lunica cosa che c’era nel reparto dolci era una polvere di cocco. Non mi sembra tu abbia mai fatto dolci al cocco vero? Quindi presa dalla disperazione ho cercato una ricetta semplice che non richiedesse altro ed ecco il ciambellone cocco e cioccolato! Buonissimo! Poi per colazione il giorno dopo e’ ancora meglio!

Torta di carote – Carrots cake

Recipe 74: A little treat for the weekend, easy, quick and nice for any occasion. I was just thinking in the summer holidays when i remembered this classic cake they cook in the mountains where i always go with my parents in august. Every year i can’t just wait for that little paradise in the Alps and i couldn’t resist to have a piece of that delicious cake…so i made it by myself!

Ingredients: 4 carrots not too big, 3 eggs, 130 gr of sugar, 150 gr of flour, 1 spoon of baking powder, 100 gr of butter, 60 gr of grated almonds, a pinch of salt and a bit of icing sugar.

For this recipe i have used for the first time the new kitchen tool, gently donated from Jenny, a friend of mine who is leaving London and though i could have done a good use of this AMAZING machine. In fact I love it already!

However let’s start with the cake: put the yolks egg in a bowl with the sugar and mix them with energy until creamy. Don’t throw away the white because you will need them later. In the meantime melt the butter in a little pan and add it to the eggs and sugar.

At this point you can add the flour and the baking powder, but little by little and mixing in the meantime to avoid any clot. Cut the carrots with a machine or grate them finely and to take out some water, place them in some blotting paper before to add it to the rest.

In the meantime , in a nother bowl, whip -up the white of the eggs that you previously left in a side. To make it easier put a bit of salt in them. This should help them to become spongy quicker.

After you mix the carrots and the grated almond with the rest, add also the white eggs whipped up and mix everything gently going with the spoon from the bottom to the top.

Prepare a baking pan with some butter and flour or just cover it with some baking paper and pour the mix in there.

Put it in an oven already hot, at 170 degree for around 40/45 minutes. To see if it’s ready, place a tooth pick in the cake and if it comes out dry, you can serve your cake! Hot is the best but remember to add a bit of ice sugar on the top!

PS: Mamy se ti dico torta di carote che ti viene in mente??? a me solo CAMPIGLIO e non vedo l’ora di venire! mi manca cosi’ tanto e una bella fetta di torta alle carote non me la toglie nessuno! Insomma l’altro giorno non facevo che pensare a quest’estate ed alla fine non ho potuto resistere ed ecco cosa ho creato! che te ne pare? Beh l’ho fatta piccola e m’e cresciuta meno del solito, ma il sapore era buonissimo.

Simple Pears Cake!

Recipe 95: I like to cook but i love to make cakes… it makes me happy, so last saturday, quite late in the night i decided to prepare a nice cake for the sunday breakfast. So i take back one of my oldest recipe and i made this quick pear cake.
Ingredients: 4 or 5 pears (depending by the size but if you prefer you can also use apples and the cake will be amazing anyway), 200gr sugar, 200gr flour, 3 eggs, 100gr butter (in origin the recipe was with 200 but 100 gr i think is enough) and a spoon of baking powder.

Put in a container the sugar and the 3 whole eggs. Mix until it become a nice yellow color and put the butter in a sauce pan on a low fire to melt it. Let it cold down and then add it to the mix.

Add slowly the flour and the baking powder and mix until you homogeneous. At this point you can put some butter and flour in a baking pan or simply a piece of baking paper like i did and you can pour the mix.

Clean the pears and cut them in little pieces. Put them on the surface of the cake until full. Then put the cake in the oven at 180 degree for half an hour and for other 10 minutes at 140.

As you can see the recipe is very quick and easy… but the result it’s really nice!

PS. Mamy te la ricordi questa torta? la facevo sempre con le mele, ma questa volta ho deciso di provare con le pere. Qui normalmente sono belle toste, percio’ ho pensato che almeno nella torta me le sarei potute gustare un po’ piu’ morbide. Che te ne pare? non male no? Questa ricetta non mi delude mai!

Carnival so… Frappe, not frappe’! (-49 weeks)

Recipe 102: it’s not Carnival in Italy without the frappe and for me in February i can’t miss them… especially being in London, so last weekend i made them at home. OK it’s not the easiest dish ever, but it’s really worth to cook it. The recipe is not my mum’s one but it’s something i have from Rome and i love it!

The ingredients for a quite good quantity are: 200gr flour – 2eggs yolk and just one white – 2 big spoons of sugar – a pinch of salt – half of a little spoon of baking powder (have to be just a little bit) – half of a little espresso cup of liquor (Wisky is better  but i used tequila…i had just that at home) and finally 2 half eggshells of olive oil.

At the beginning you will just need to add all the ingredients together except one half eggshell of olive oil. Keep this for later. Mix everything before with a spoon and then directly with your hands until you will have a uniform dough. Add a bit more of oil if you can’t make it yet.

At this point you will need to extend the dough and put some more oil on it. Let the oil be absorbed by the dough and close it in 4 following the pictures.

You will create a dough again and you will extend it another time to put some more oil. Now close it again and create another dough. Repeat the same until the end of the oil.

After all this work the pasta will be very very elastic, but you will need to extend it again and cut some big strips.

In the meantime prepare a pan with some boiling oil and put the stripes one by one. The oil need to cover and fried them. Be careful it’s question of just few minutes so keep on checking and turning them to avoid to burn them.

Take them off form the oil as soon as they start to take enough color. Put the on some absorbent paper and then pass them in a new clean plate. Just put some icy sugar on top and serve…better if still a little warm!

Mamy guarda e’ stata dura ma al secondo tentativo je l’ho fatta! e devi vedere come sono sparite! ero troppo contenta e non e’ carnevale senza frappe! e poi che sto un altro anno senza mangiarne nemmeno una? e invece eccole qui, con la mitica ricetta Dalla Torre ho portato le Frappe pure a Londra!!!(neanche a dirvi che qui non le hanno mai sentite nominare).

My birthday cakes: apple and double color ciambellone

Recipe 105: And also this year my birthday arrived…and this needed to be a special TILT birthday, so i decided to cook my favorite dishes all in one dinner!

I started the preparation the night before with the cakes because i wanted to bring one at work and i wanted to have a double choice in my dinner…so finally i cooked 3 cakes: 2 ciambelloni with apples and 1 double color ciambellone.

Ingredients for one cake: 3 eggs, 150 gr sugar, 300gr flour, 80-100 gr butter, 1 glass of milk, some baking powder, and add 2 big appleas and some cinnamon if you want an apple cake or some chocolate if you want a double color one. Finally i bought some colorful sugar to finish the cakes…exactly like my mum use to do it when i was in primary school.

Mix the 3 entire eggs with sugar until create a cream, then add some of the flour and mix again. Put the butter on the fire and when melted add it to the cake. Add the rest of the flour and mix again until becomes very hard.

At the end add the milk with the baking powder and keep on mixing. Then cut the apples in very little pieces and just put it  with the rest. The cake is all here, very simple and quick, but everyone will like it.

Now put some butter in all the mold and pass then some flour in it. Like thsi the cake won’t stick to the mold.  Then put the mix inside and cover the cake with some funny and colorful sugar sprinkle.

Put in the oven for one hour at 180 degree. Don’t check the cake before than 1/2 an hour at least or it won’t grow up anymore. Open the oven just when you think they already grew up enough.

The easy alternative to this cake  is with chocolate. Put some of the mix just prepared,in a little mold and add to the rest of the mixsome chocolate in pouder. Before to add to the rest the chocolate mix, I also put some little pieces of chocolate inside and i covered it with the rest. The last touch will be the chocolate sprinkles on top.

This is the final results of the cakes i had at home, and the following one is the cake i did to bring it at work! They exactly look like my mum’s cakes!

PS.: ciao mamy, che ne pensi? E’ bella come quella che mi facevi tu alle elementari????io direi che ci sono andata vicino, ma la prossima volta devo controllare meglio la cottura. Vabbe per il momento mi accontento! Le due piccole sono quelle che ho fatto per la casa, mentre la grande e’ quella per l’ufficio.

Little yogurt cakes – tortine allo yogurt (-54weeks)

Recipe 109: and now an easy cake to make and have for breakfast with a nice cup of hot milk, coffee or chocolate or as i did in my last dinner, i served as a dessert with some vanilla ice cream.

The ingredients for this are: 1 cup of yogurt (125gr) – 3eggs – 1 cup of sugar (around 100gr) – 3 cups flour (around 200-250gr) – 1 full little spoon of baking powder – 1cup of sunflower or arachis oil – a pinch of salt – some icing sugar and some milk. Because i decided to use strawberry yogurt instead of plain yogurt i also bought some vanilla ice cream and fresh strawberries to serve it to my guests.

Start mixing the 3 egg yolks with the sugar and the pinch of salt until you will have a cream. Then, still mixing, add slowly a cup of oil and then the 3 cups of flour always slowly and trying to avoid clots.

At this point the mix will be quite hard and you will need to add the yogurt and some milk if it’s still not enough liquid. The last touch will be to whisk the egg whites until stiff and add them slowly to the mix being very careful.

Finally you can put everything in some nice silicon moulds (like the one i received for Christmas) or in a classic baking pan at 180 degree for about 30 minutes.Don’t forget to add some icing sugar on the top or even ice cream and strawberries “marinated” at the beginning of the night with some orange juice or lemon if you prefer. They will release the juice and the taste will be just perfect!

PS. Mamy hai visto che carine le tortine che ho creato con le formine che mi avete regalato?Avevo voglia di servire un dessert facile e questa ricetta con lo yogurt ci stava benissimo. Il vero ciambellone me lo tengo per la mia festa! vedrai vedrai ….
