Eggs and tomatoes antipasti (- 20 weeks)

Recipe 44: After the holiday and a really busy week, here I am again with a new and easy recipe. This one is very quick and my mum sometimes did it for aperitif to guests coming for lunches or dinners.

I love the mix of these simple ingredients, so it’ s something I do often also mixing it with salad: 3 eggs for person, 1 can of tuna, some cappers, some tomatoes (not cherry tomatoes but not even too big), mayonnaise and that’s all.Boil the eggs for around 8-1o minutes. In the meantime place some tuna, a spoon of cappers and some mayonnaise in a bowl. When the eggs will be cooked, pass them under cold water, take of the skin and cut in half.Remove the yolks from the eggs and add them to the bowl. Mix it all until create a cream and than place the cream back in the eggs. Same thing can be done with the little tomatoes and the taste it’s really good.

Just cut the top of the tomatoes and take of the seeds and the interior. Replace it with the cream and close it back with the tap. They will be some really tasty bites!

Pasta alla puttanesca (-25 weeks)

Recipe 54 : It’s a long time I don’t cook pasta and I really wanted to prepare for my parents and me something my mum doesn’t do often. This is a classic in the pasta dishes and very easy as usual: pasta alla puttanesca.

The ingredients for 3 people are: 300gr pasta (normally it’s with spaghetti, but I decided to use a short pasta called gnocchi, perfect to contain the sauce) 50gr black pitted olives, 300gr tomatoes sauce or passata, 2 spoons of cappers, 5-6 anchovies, some parsley, salt, chili, olive oil and a garlic clove.

Cut the anchovies, the olives and the parsley in little pieces. In the meantime put some olive oil in a pan with the garlic clove or some garlic powder until goldish and then take it out. To give more flavour I suggest you to crush the garlic a bit before.

Then place in the pan the anchovies in pieces and wait for these to melt in the oil. When this is ready, add the olives, the parsley and the cappers. Mix and let it cook a bit, then pour the tomatoes sauce, some chilli, salt and leave it for 10 – 15 minutes to cook until becomes a bit thicker.

In the meantime you can put the pasta in the water and one minute before the time written on the bag, drain it and place it in the sauce, mixing very well.

Serve it in a plate without Parmesan but with a bit of fresh parsley if you like. Enjoy!

Insalata di riso – Rice salad

Recipe 57: I’m in holiday in these days so it’s very difficult to update the blog and not just for the  internet connection, hard to find or very slow, but especially because I was and I’m still with very good chefs. I tried to cook a bit, but amazed by my mum dishes and my friends capabilities, I couldn’t bother to cook some of my recipes.

In Spain the only one I tried was the Insalata di riso or Rice salad, fresh, easy, and perfect to use all the food left in the fridge. The only thing that really matter is the time of cooking of the rice. If you are good with that, the dish will be a success.

Ingredients: rice,  pitted olives (green or black it’s the same), cherry tomatoes, Frankfurt or ham, emmethal, eggs, mais, pies, cappers, or whatever else you like.

For this recipe I have asked to everyone the secret they use to cook the rice and there are 2000 different theories. I tried one, but I wasn’t happy neither with that, so I will give you my mum’s solution:

Put some water to boil with salt and then add around 50 gr of rice per person.  Let the rice cook but try it often, I wouldn’t leave it there for more than 10 minutes. You need to drain it when “al dente”. That’s really important. So if on the bag it says 15 minutes, try it at 10 and remember that it will finish to cook a bit outside too. If instead the rice is already perfect, pass it under cold water to stop the cooking process.

In the meantime, boil also some egg, cut some emmenthal cheese, ham or Frankfurt, olives, cappers, peppers or cherry tomatoes if you want, mais and if you can, boil also some pies. I love them in this salad.

When the rice is ready and all these ingredients are cut in pieces, add some oil to the rice and all the ingredients, mixing very well. My mum doesn’t use to add anything else to it, maybe just a bit of salt and pepper, but all the ingredients will give the taste to the rice.

Serve in a plate and Buon appetito!

PS. Mamy con la cottura del riso sono una vera tragedia…mi viene sempre extra cotto! Argh! ho provato anche con un misurino di riso e 3 di acqua e nulla, alla fine era un pappone. La prossima volta mi ci metto proprio con attenzione, e vediamo se al prossimo pic nic saro’ piu’ fortunata! Meglio i risotti del riso semplice! uffa!

Starter: Tartine all’italiana (Product tasting)

Recipe 63: When i went to Identita’ in London, a festival of italian food already very famous in Milan, i had the pleasure to receive lots of products especially from Sicily and last weekend they came really handy. As i told you we organized a very quick dinner at the last moment for some friends and instead to buy the classic crisps as an aperitif, i thought to offer some “Tartina”, feta cheese and greek peppers! yummy!

Ingredients: Tartine are really easy to prepare because is just some bread cut in square and toasted where you can put whatever you want, from cream cheese and salmon, to pate’ or cheese and ham. This time i instead used this really nice Sicilian Sauces from Gli Aromi. One was made with cappers, one with black olives and finocchietto, but the best one was absolutely Finocchietto ragusano (plant from the fennel family).

I have also tried the same sauce with pasta and it’s even better. My guests loved the tartine, but the pasta was even more particular considering the very rare ingredients and taste.

Just put some water to boil and add the spaghetti when ready. In the meantime put some of the sauce in a bowl with some hot water from the pasta and when this is cooked just mix it all. Because the finocchietto has a very sweet taste, maybe with some pancetta or bacon as well i think it could be amazing.

PS. Mamy ci siamo fatti una mangiata lo scorso fine settimana. Io ero da poco tornata da un festival con vari prodotti tra cui queste salsine siciliane e non m’e’ parso vero di provarle con i miei amici. Percio’ un po’ e’ stato messo sul pane e servito come aperitivo e poi qualche giorno dopo le ho anche provate con la pasta e stanno benissimo. La migliore e’ una salsa fatta di finocchietto ragusano! Particolarissima!

Asparagi alla salsa d’uovo – Asparagus with eggs sauce (Product testing)

Recipe 66: Today a quick recipe that i created looking for a way to use the egg yolks left from the previous recipe. So i found this easy and nice sauce, that can be used instead of mayonnaise and that is very good with asparagus… and maybe even a bit lighter!

Ingredients: asparagus, 2 egg yolks, white vinegar, a little spoon of english mustard or two of the dijon mustard, some cappers and finally some spoons of Olive Oil (i used an amazing sicilian extravegin olive oil “274“, thanks to Aprile brothers that i discovered in Identita’ London a festival about the good italian cuisine)

It’s very easy to make this sauce, especially if you have a mixer: while the asparagus are boiling for some minutes in salty hot water, place in the mixer 2 egg yolks, 1 spoon of vinegar, 5 spoons olive oil, a little spoon of mustard, some cappers. Mix it all and try, to know if it’s the case to add some salt and peppers.

When ready, drain the asparagus and place them in the plate with the sauce on the top and i hope you will enjoy them!

PS. Mamy, mi sono scoperta una vera appassionata di asparagi, sara’ per il sapore particolare e delicato … non so, ma per non mangiare sempre le stesse verdure, sono perfetti. E dato che stavo cercando di utilizzare il rosso delle uova che mi era rimasto dal dolce precedente, ho trovato questa salsina che dicono sta particolarmente bene con gli asparagi ed e’ vero! Una specie di mayonese piu’ leggera e saporita!

Vitello tonnato – vitel tonne’- veal with tuna sauce

Recipe 72: This is a classic dish of the summer because is a delicious plate to serve cold and so it’s perfect for summer parties too! For how much could sound strange to put together meat and fish, this 2 tastes together are just amazing!

Ingredients for 3-4 people: 600gr of round of veal (of course in england it’s not so easy to find this cut so i bought a shoulder piece), carrot, celery, onion, olive oil,  and white wine 1 or 2 glasses. Then for the sauce you will need 250 gr of tuna, 125 gr mayonnaise, some cappers, 1 anchovy fillet in olive oil.

Let’s start from the meat cooking process: there are lots of different systems, you can boil it, you can marinated the night before (like my mum use to do) and cook it on a very low fire the day after, but because  i have never enough time to do all this and I’m very scared the meat can become too dry or too hard, i decided to follow another way, that now i will show you.

First of all put some olive oil in a pan and wait to reach the frying temperature. In the meantime clean you carrot, celery and onion and cut all of them very finely to create your “soffritto” (i used my amazing new machine for that). When this is ready pour it in the oil, turn the eat down and let gently fry for 10/15 minutes, until the blend of vegetables is light brown in color.

Then add some white wine and increase the fire. Let everything cook until the wine is evaporated and place the meat in the pan and brown it all around. This operation that i ws thinking was going to be very quick, it will instead take a bit of time, so if you see the soffritto gets dry and close to burn or stick to the pan, add some water and wait for the meat to get a bit colored, turning it every now and then.

When the veal is colored, pre-heat the oven at 1500 C, cover the pan with an aluminum sheet, then put it in the oven for about 50-55 minutes. Check periodically, and add water to keep the meat soft. The roast should be a bit brown outside, but pink in the middle.

While the meat is in the oven, you can prepare the sauce. As you could have seen i didn’t add any salt to the dish because the sauce it will give all the taste the meat will need.

Just put all the ingredients together and mix them: tuna, mayonnaise, some cappers and the anchovy without any fishbones. Use a mixer to do the sauce and if you see the ingredients are still to hard to mix, add some sauce form the meat. You will have a creamy and really tasty sauce!

Let the veal cool in its broth, then cut it in very thin slices ( please use a very sharp knife because the slices need to be really thin… of course i didn’t have any but i manage at least to cut it). The best is using a meat cutter.

Cover each slice with a good amount of sauce and add some cappers just to give the final touch!

PS. Mamy finalmente e’ arrivata un po’ d’estate anche qui ed io non vedevo l’ora di fare il vitel tonne’. Ok devo dire che me lo aspettavo piu’ rapido da cucinare, mentre invece la carne ha i suoi tempi, pero’ che buono. L’unico problema e’ che mi devo attrezzare cin coltelli piu’ fini perche’ con questi non riuscivo proprio a tagliare nulla!

Chicken with peppers – Pollo con i peperoni

Recipe 90: this is a classic recipe from the big lunch on the 15th of August…yes you understood well. We use to prepare chicken with pepper in summer, but don’t ask me why. I have never understood it! too hot for me.

However i decided to prepare it last week, when i saw some nice peppers in the supermarket and here is the recipe with all the ingredients for 2/3 people: 250gr peppers of any color, 500gr chicken breasts, 1 garlic clove, some green pitted olives, some capers in brine, 2 tomatoes, onion, butter, a bit of liquor like Porto, some basil, sage and bay leaves.

In first place wash the peppers and cut them in little slices taking out the center and the seeds. Put the 2 tomatoes in boiling water and leave them there for a bit. In the meantime put some butter in a pan and add the onion and the garlic cut in little pieces.

At this point cut the chicken in pieces and prepare the mix of herbs: put some basil, sage and bay leaves on a kitchen board and chop them finely, then add the pitted green olives in pieces and 2 spoons of capers. The smell will be amazing!

Now take the tomatoes form the fire, drain them and take off the skin, cut them in half, remove the seeds and cut them in slices to add to the peppers.

When the onion and garlic will become goldish, add the chicken breasts cut in pieces and let them cook a bit. Their color will change and just when all the pan will start to get dry, add some Porto liquor and they will soon get colored and really tasty.

Finally add to the chicken the peppers, the tomatoes, the mix of herbs and a bit of olive oil, salt and pepper, but i also suggest you to move everything in a sauce pan to make all the ingredients cook quicker and to create also a nice sauce.

When the peppers will be mild and well cooked, the dish will be ready and you can serve it hot in a plate.

PS. Mamy questa ricetta e’ spaziale…ci siamo leccate i baffi. Altro che il solito pollo con i peperoni a ferragosto. Questo con le olive i capperi e questo misto di erbe e’ veramente insuperabile! Considera che Nat non ha la passione dei capperi e delle olive, ma quando ha assaggiato questo mix ne e’ rimasta affascinata! DELIZIOSO!
