After summer update: -19 weeks and still -6kg

And also this summer has passed and it was great! Lots of little trips and lots of different food: from home made dishes in Costa Brava with some tapas here and there, to the amazing food in the mountains, with polenta and nice cakes, to greek dishes in the Cyclades Islands, with lots of fish and the fantastic yogurt to finally the aperivi in Turin and Milan, where I was for work but where I have enjoyed a lot the nights too.

So now let’s come back to the reality and let’s check the weight!!!! That was my worst nightmare during the summer…but still it didn’t stop me from eating and enjoying the holidays.

Now it’s time to take back a bit of the classic routine also in the kitchen, with salad for lunch and meat or fish with vegatable for dinner! Yes I need it! Some depuration it’s always good at some point, especially if in these monts the weight went a bit up and down!

Before to leave for the holidays I arrived to loose 6 kilos, but coming back from Greece I had 2 kilos more and the work trip in Turin and Milan wasn’t exactly what I was looking for to comeback in track.

Instead also with aperitif and having light lunches out, it seems I could loose again my 2 kilos… And this is weird! Maybe it happened for the amount of work I had to do and a bit of rush and stress that finally help to burn calories! Or is it just the effect of a missing fisical activity that make my mussels weight less??

For the moment I don’t know but tomorrow I will start again the gym too and we will see! Fingers crossed for the challenge and lots of moral support to everyone is trying to comeback in the routine like me 🙂

PS. 🙂

Vitello tonnato – vitel tonne’- veal with tuna sauce

Recipe 72: This is a classic dish of the summer because is a delicious plate to serve cold and so it’s perfect for summer parties too! For how much could sound strange to put together meat and fish, this 2 tastes together are just amazing!

Ingredients for 3-4 people: 600gr of round of veal (of course in england it’s not so easy to find this cut so i bought a shoulder piece), carrot, celery, onion, olive oil,  and white wine 1 or 2 glasses. Then for the sauce you will need 250 gr of tuna, 125 gr mayonnaise, some cappers, 1 anchovy fillet in olive oil.

Let’s start from the meat cooking process: there are lots of different systems, you can boil it, you can marinated the night before (like my mum use to do) and cook it on a very low fire the day after, but because  i have never enough time to do all this and I’m very scared the meat can become too dry or too hard, i decided to follow another way, that now i will show you.

First of all put some olive oil in a pan and wait to reach the frying temperature. In the meantime clean you carrot, celery and onion and cut all of them very finely to create your “soffritto” (i used my amazing new machine for that). When this is ready pour it in the oil, turn the eat down and let gently fry for 10/15 minutes, until the blend of vegetables is light brown in color.

Then add some white wine and increase the fire. Let everything cook until the wine is evaporated and place the meat in the pan and brown it all around. This operation that i ws thinking was going to be very quick, it will instead take a bit of time, so if you see the soffritto gets dry and close to burn or stick to the pan, add some water and wait for the meat to get a bit colored, turning it every now and then.

When the veal is colored, pre-heat the oven at 1500 C, cover the pan with an aluminum sheet, then put it in the oven for about 50-55 minutes. Check periodically, and add water to keep the meat soft. The roast should be a bit brown outside, but pink in the middle.

While the meat is in the oven, you can prepare the sauce. As you could have seen i didn’t add any salt to the dish because the sauce it will give all the taste the meat will need.

Just put all the ingredients together and mix them: tuna, mayonnaise, some cappers and the anchovy without any fishbones. Use a mixer to do the sauce and if you see the ingredients are still to hard to mix, add some sauce form the meat. You will have a creamy and really tasty sauce!

Let the veal cool in its broth, then cut it in very thin slices ( please use a very sharp knife because the slices need to be really thin… of course i didn’t have any but i manage at least to cut it). The best is using a meat cutter.

Cover each slice with a good amount of sauce and add some cappers just to give the final touch!

Buon appetito!

PS.

Almost half way there: -38 weeks and -5kg :)

Today i won’t post a recipe but just a little update for who is curious to know what is happening to my diet.

Normally it’s at the beginning of May that everyone starts to think again in diets and kilos: the summer is near, the cloths are less heavy, you bring back in your wardrobe the stuff of the previous summer… and there the scream…. “how is it possible i don’t enter anymore in my summer trouser???”

But this year thanks god i didn’t have to scream…i just had to buy new trousers!

Ok here are the results of my challenge until now:

In 2 weeks i will be at half of my challenge (70 weeks in total).

In this 33 weeks i cooked 62 recipes and i magically lost … 5kg and 1 size!

I have to say i didn’t suffer too much, i have just been a bit careful in eating lots of vegetable and fruits and less pasta in the night preferring fish and meat. But of course i have still eaten all the dishes i cooked, i went to eat outside various times, i didn’t control myself in Christmas or Easter… so i lived a kind of normal life. In reality i’m also starting to think that some good days of great food it’s like a shock for the body after some weeks of diet… it’s like the metabolism is working more after receiving all this food. My unties was always telling me this! So finally having some good food for some days, it’s not a problem at all… and i’m the real prove of this!

The other thing i can add it’s that the GYM helps! This is the first year where i’m kind of constant and with a class  twice a week and some good walk when i could, the kilos seems to have gone away without suffer too much!

However i’m still just half way from my real target and these will be the worst kilos to loose, but at least i’m already quite happy to don’t have any bad surprise this year! 🙂 Maybe the summer season won’t be so scary!

For all of you who are instead having this bad time of the year,(i understand you all i swear!) i can just tell you that are still missing 2 months (more or less) to the real holidays and it’s still possible to be lose 2-3 Kg …so just add some gym to your routine, walk, eat fruit and musley in the morning, salad at lunch and fish or meat with vegatable for dinner, but also cook a nice meal at least once a week and you will get there!

Good luck to everyone (me included)!

PS.
